Chicken Stroganoff

    Stroganoff is perfect when you need to serve your family a quick meal.
    Serves: 4

    Ingredients

    4 chicken breasts, skinless, boneless
    3 tbsp olive oil
    1 large onion thinly sliced
    1 garlic clove
    1 cup sliced mushrooms
    1 ¼ cup sour cream
    salt and pepper to taste
    chopped fresh parsley for garnish

    Steps

    1. Cut each chicken breast into two fillets. Place each fillet between sheets of plastic wrap and flatten with a meat mallet to approximately ½ inch thick. Cut chicken into 1 inch strips.

    2. Heat 2 Tbsp of oil in a large skillet over medium-high heat and sauté sliced onion until soft but not colored. Add garlic and mushrooms and cook until golden brown. Remove onion, garlic and mushrooms from pan but keep warm.

    3. Increase heat and add the remaining oil and fry chicken until golden brown and completely cooked (when internal temperature reaches 165°F (74°C). Add onions, garlic, mushrooms and season with salt and pepper.

    4. Stir in sour cream and bring to gently boil. Sprinkle with fresh parsley.

    5. Serve with rice or pasta.
