They’re an excellent source of vitamins B6 and C, and contain calcium, potassium and iron, all of which are essential parts of a balanced diet. They are also the best natural source of starch. This is what makes them such an excellent addition to soups and stews. The starch acts as a thickening agent, making the dish thicker and creamier without the addition of cornstarch or cream.
