How to Blacken Chicken
Popular in Cajun cooking, blackening is the process of cooking meat that has been coated in a butter and spice mixture and then cooked over a very high heat. The result is an insanely delicious black-brown crust. While traditionally done using fish, this process works just as well on other kinds of meats, especially chicken breast.
It’s also delightfully easy to make. The spices you’ll need generally include some variation of the following: chilli powder, pepper, salt, paprika, onion and garlic powder, thyme and oregano–all in equal parts. Over time experiment with the quantities to create your own signature spice mix. Pre-heat a heavy bottomed pan over high heat for 5-10 minutes. You’ll want to use a non-stick pan to ensure you get a nice crust.
To make the blackened chicken, melt a stick of butter in a pot and then combine with Cajun spice mixture. Dredge your chicken breasts in the mixture until well coated on both sides and place in your hot pan. Cook for about 3 minutes a side or until the internal temperature reaches 165ºF. C’est tout!
