Air Fryer Chicken Fajitas

This Tex-Mex inspired dish is perfect for a quick weeknight dinner. Mix and match with your favourite toppings and assemble around the dinner table for a fun, interactive meal!

Ingredients

1 red pepper, cut into 1/2-inch (1 cm) thick slices
1 orange pepper, cut into 1/2-inch (1 cm) thick slices
1 red onion, cut into 1/2-inch (1 cm) thick slices
3 tbsp vegetable oil
2 tbsp chili powder
½ tsp salt
¼ tsp pepper
1 lb chicken breasts, cut into strips
12 corn tortillas (6-inch/15 cm), warmed
1 cup guacamole
½ cup cilantro leaves
1 cilantro leaves

Steps

  1. Preheat air fryer to 375°F (190°C). In large bowl, combine red and orange bell peppers, red onion, vegetable oil, chili powder, salt and pepper until well coated; add chicken, stirring to coat well.

  2. In batches, arrange chicken mixture in air fryer tray; cook for 15 to 18 minutes or until chicken is cooked through and vegetables are tender.

  3. Serve chicken mixture with warmed tortillas, guacamole, cilantro and lime wedges.

Helpful Tip

Some air fryer models do not require preheating. Check manufacturer’s instructions for proper use.

Alternatively, preheat oven to 400°F (200°C). Bake chicken and vegetables on baking sheet in single layer for 18 to 20 minutes, turning halfway through, until vegetables are tender-crisp, chicken is golden brown and internal temperature of chicken registers 165°F (74°C) on instant-read thermometer.
