Chicken & Egg in a Mug

Before you start, wash all surfaces and your hands with soap and warm water, and remember to wash your hands, utensils and cutting boards after they touch raw meat or eggs. Avoid cross-contamination by using a different cutting board for your meat and other ingredients. Make sure you’re cooking to safe temperatures and chilling any leftovers within two hours. Steps
Coat the inside of a mug with olive oil or non-stick vegetable spray.
Add diced cooked chicken.
Beat egg in bowl with fork. Pour into mug.
Top with grated cheese and microwave for 1 ½ minutes on HIGH power or until egg puffs up and cooks through but is not dry. Timing will vary with different microwaves.
Top with your favourite salsa and some fresh minced chives and serve.
Helpful Tip
Use any fresh herb you have on hand like marjoram, oregano or thyme. Sub your favourite cheese for the cheddar.
