Chicken with Herbed Cream Cheese and Prosciutto

Before you start, wash all surfaces and your hands with soap and warm water, and remember to wash your hands, utensils and cutting boards after they touch raw meat or eggs. Avoid cross-contamination by using a different cutting board for your meat and other ingredients. Make sure you’re cooking to safe temperatures and chilling any leftovers within two hours. Steps
Preheat oven to 350°F. Cut an opening in the thickest side of each chicken breast with a sharp knife to create a pocket. Using a spoon, insert Boursin cheese inside the pocket.
Wrap 2 slices of prosciutto around the breast to close the pocket. Repeat for the remaining chicken breasts.
Heat a non-stick pan to medium heat and add olive oil. Pan-fry the breasts on each side for about 2-3 minutes. Transfer breasts to a rectangular glass pan.
Bake for 30-45 minutes until internal temperature of thickest part of breast meat reads 165°F on a meat thermometer.
Serve with rice and vegetables of your choice.
