Sweet Coconut Clove Chicken

This savoury slow cooker recipe is perfect for potlucks! It will fill your kitchen with its exotic, mouthwatering aromas.

Ingredients

14 skinless chicken drumsticks
½ cup light coconut milk
½ cup low-sodium chicken broth
½ cup demerara brown sugar
¼ tsp cloves, ground
3 tbsp tamari
2 tsp garlic, minced
2 tbsp cornstarch
2 tbsp water
¼ cup cilantro, fresh, minced

Steps

  1. Add drumsticks to slow cooker.

  2. Combine remaining ingredients (except for cornstarch, water, and cilantro) and pour over chicken in slow cooker.

  3. Cover and cook on low 4-6 hours.

  4. To thicken sauce, mix cold water and cornstarch in small saucepan. Pour in pan juices from slow cooker and boil over medium heat until thickened.

  5. To serve place chicken on platter and garnish with minced cilantro. Serve sauce with chicken.
